If it required say, 8 banana slices (Im just saying here) then you could always double it to 16 and cut out the seeds.

bananas are a necessary ingredient in banana bread. The bananas provide the necessary moisture to keep the bread moist. Using extract wouldnt be enough moisture, resulting less than desirable results. The steam that is released from both the bananas and the butter in the batter, in conjunction with the baking powder, helps the bread rise. Steam couldnt be created if you were using extract. If you cant have seeds...simply slice the banana lengthwise down the center. You will expose the seeds. Take the tip of a spoon, and run it along the center of the banana to remove the seeds. My dad cant have seeds either, so when I cook for him, I deseed everything. Hope this helps
