I have mulled over either cutting the sugar content in half to half a cup or throwing in some Splenda to see if it would work.
This is a Bisquick-based recipe that calls for one cup of sugar to go with the banana bread. I want to bake something tasty but healthy at the same time. This dessert is for an at-work potluck party.
Any suggestions? What would happen if I left out the sugar completely? I also thought about adding blueberries to the recipe instead of nuts (I like the taste of blueberries better than nuts, which was suggested in the recipe).

The nuts are so healthy for you - why would you want to get rid of those?
You might want to try reducing it by a third or so. You might also try replacing half the sugar with Splenda. Try this recipe:
HOME-STYLE BANANA BREAD (SUGAR FREE)
3/4 c. mashed bananas
1/3 c. vegetable oil
2 lg. eggs
1/2 c. water
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. chopped nuts
Beat together mashed banana, oil, eggs and water until creamy. Add flour, baking soda, baking powder and spices. Beat well. Stir in nuts. Spoon batter into oiled and floured 9 x 5 inch loaf pan. Spread batter evenly. Bake at 325 degrees for 45 minutes or until a knife inserted comes out clean. Cool completely on wire rack before slicing.
Try using apple sauce instead of the sugar - or 1/2 apple sauce and 1/2 sugar.
Here's a recipe from the back of a bag of sucralose sweetener (generic Splenda:)
1 cup sucralose sweetener
1/3 cup margarine or butter 9softened)
2 eggs
1 1/2 cups mashed ripe bananas
1/3 cup water
1 2/3 cup all purpose flour
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1/2 cup nuts (optional)
Preheat oven to 350掳 F. Grease bottom only of 2 small loaf pans or one large loaf pan. In a large bowl combine all ingredients. Pour into pan(s). Bake at 350掳 for 35 minutes in the small pans, or 60 minutes in the large pan.
If you are going to put blue berries in, it will probably take a little longer due to their moisture content.
I have always used Apple Sauce in place of sugar.

You can use all Splenda is your wishing to go lo or sugar free, as splenda is excellent for baking. Otherwise would suggest the applesauce as a substitute to cut the amount of sugar added.
SUGAR FREE BANANA NUT BREAD
3 or 4 mashed bananas
1 tbsp. sweetener (10 pkts.) Sweet %26amp; Low
2 eggs
1 3/4 c. flour
3 tsp. baking powder
1/4 tsp. salt
1/4 c. chopped nuts
Sprinkle artificial sweetener over mashed bananas and stir until dissolved. Beat eggs and blend into bananas. Stir in dry ingredient. Add nuts, blend thoroughly. Bake in greased 9 x 5 x 3 inch loaf pan at 350 degrees for 25 minutes then lower heat to 300 degrees and continue cooking for 35 more minutes. Serves 10. Exchanges: 1 1/2 bread, 1/2 fat, 121 calories.
