Loaf Bread Recipes anyone?

I'm in FCCLA at my school and we are having a loaf bread contest. I would like a really good recipe that has a chance at placing. It can't be store bought, it has to be homemade. I did Zucchini Honey Nut loaf bread last year so nothing too similar to that please. Thanks!Loaf Bread Recipes anyone?
This is my favourite.





INGREDIENTS


4 eggs


2 cups white sugar


1 cup vegetable oil


2 cups all-purpose flour


2 teaspoons ground cinnamon


1 teaspoon salt


2 teaspoons baking powder


1 teaspoon baking soda


1 (8 ounce) can crushed pineapple, drained


1 cup chopped walnuts


2 cups grated zucchini


2 teaspoons vanilla extract


1 cup confectioners' sugar


2 tablespoons milk








DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Grease and flour a tube pan.


Sift together flour, cinnamon, salt, baking powder, and baking soda on to a piece of waxed paper.


In a large bowl, beat eggs and sugar until light colored. Mix in oil. Add sifted ingredients to egg mixture, and beat for 2 minutes. Stir in pineapple, chopped nuts, vanilla, and zucchini. Mix thoroughly. Pour batter into prepared pan.


Bake for 80 minutes, or until tester inserted in the center of the cake comes out clean. Cool for 30 minutes.Loaf Bread Recipes anyone?
Here is a recipe for Pumpkin bread. Sounds pretty standard, but it is soooo delicious. It makes 2-4 loaves depending on the size of your loaf pans (when I use the disposable pans it makes 4) I make this for my husband around Christmas and he will eat a whole loaf for dessert if I let him! I also hand it out as gifts, and people are always happy to get it. Good luck!





3 C sugar


15oz canned pumpkin (plain pumpkin, not pie filling)


1 C oil


1 C water


4 eggs


3 1/3 C flour


2 tsp soda


2 tsp cinnamon


1 1/2 tsp salt


1 tsp baking powder


1 tsp nutmeg


1/2 tsp clove





Preheat oven at 350. Combine the first 5 ingredients, beat well. Combine the dry ingredients, add to the wet slowly and mix well. Pour into greased loaf pans. Bake for 60 minutes, or until toothpick comes out clean. let cool for 10, then remove.
Here is one a friend just gave me and I tried and was very good. It was originally done by the native americans so it definitely has significance in history.





Olympic Squaw Bread (Goddess in the Kitchen)





INGREDIENTS:





2 cups warm water


1 1/2 cups brown sugar


2 tbsp yeast


1/4 canola oil


2 tbsp milk


2 tsp salt


1 large egg


4 cups whole wheat flour


8 cups unbleached flour


2 cups shredded apples





INSTRUCTIONS:





Pour the water into large bowl and add the sugar but do not mix. Sprinkle yeast on top and set aside for five minutes. Then add oil, milk, salt, egg, whole wheat flour, 4 cups of the unbleached flour and apples. Mix. Gradually add remaining flour until right consistency. Knead for 5 minutes. Cover and let rise.





When the dough has doubled in size, punch it down and Knead for aobut 5 minutes. Divide in thirds and shape into rounds. Place on cookie sheet that is sprinkled with cornmeal or lined with parchment. Slash with a sharp knife. Let rise until almost doubled.





Baked in preheated overn at 350 degrees for 40 minutes. When done, brush with melted butter.
