Zucchini and Banana bread recipes?

Anyone have any EASY recipes for them? No nuts or chocolate though.

The best zucchini bread I've ever made:


Ingredients:





2/3 cup of shortening


2 %26amp; 2/3 cup of sugar


4 eggs


3 cups of shredded zucchini


2/3 cup water


3 %26amp; 1/3 cup all-purpose flour


2 tsp. baking soda


1 %26amp; 1/2 tsp salt


1/2 tsp baking powder


1 tsp ground cinnamon


1 tsp ground cloves


2/3 cup coarsely chopped walnuts


2/3 cup raisins


2 tsp vanilla

Preheat oven to 350 degrees.


Mix shortening %26amp; sugar in a large bowl.


Add 4 eggs, zucchini %26amp; water.


Blend in flour, baking soda, salt, baking powder,


cinnamon, cloves %26amp; vanilla.


Stir in walnuts %26amp; raisins.





Take a bread loaf pan and coat bottom and sides


w/ flour. Pour your mixure in the coated pan.


(makes 2 pans)


Bake one at a time for 60-70 minutes.


Cool slightly, loosen sides %26amp; remove from pans.

Banana bread





It's smart to have a banana bread recipe on hand when you buy bananas by the bunch as the last few often get overripe before you're ready to eat them. When you want to cook with bananas, wait until they're slightly overripe, with lots of brown spots and the fruit slightly mushy and glossy.





You can peel and freeze overripe bananas until you're ready to use them.





Ingredients


3 ripe bananas


2 1/2 cups flour


2 teaspoons baking powder


1 teaspoon baking soda


1 teaspoon ground cinnamon


1/2 teaspoon freshly ground nutmeg


1/2 teaspoon salt


2 whole eggs


1/2 cup packed light brown sugar


1/4 cup granulated sugar


1/2 cup milk


1/4 cup vegetable oil


1 teaspoon pure vanilla extract





Method


Heat the oven to 350°





Puree bananas in a food processor; transfer to a bowl. Set aside. Sift together the flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.





Beat eggs and the sugars in a large bowl with a mixer on high speed until thick, about 3 minutes. Add the bananas, milk, oil and vanilla. Beat until thoroughly blended. Reduce speed to low; add the flour mixture in three portions.





Transfer the batter into a greased 9” x 5” loaf pan with the bottom lined with greased parchment paper. Bake until a wooden pick inserted into the center of the loaf comes out clean, about 1 hour, 10 minutes. Cool in pan 10 minutes; invert the pan onto a wire rack to unmold. Set aside to cool, about 1 hour. Slice with a serrated knife.
Banana Bread: The Best





2 1/4 cups all-purpose flour


1 teaspoon baking soda


1/2 teaspoon ground cinnamon


1/2 teaspoon ground nutmeg


1 cup white sugar


2 eggs


1/3 cup unsweetened applesauce


4 ripe bananas, mashed


1 tablespoon vanilla extract


1 cup raisins (optional)





than for a great crumble top:


1 boc of yellow cake mix


stick butter crumbled into the cake mix


1/2 cup brown sugar





1.Preheat oven to 375 degrees F (190 degrees C). Lightly grease and flour a 9x5 inch loaf pan.


2.In a large bowl, stir together flour, baking soda, cinnamon, nutmeg and white sugar. Stir in eggs, applesauce, bananas and vanilla extract. Fold in raisins if desired. Pour batter into prepared pan.


3.Bake in preheated oven for 45 to 60 minutes, until a knife inserted into center of the loaf comes out clean.

1/2 cup butter


3/4 cup brown sugar


2 large eggs, beaten


2 1/3 cups mashed very overripe bananas








Directions


1Preheat oven to 350°.


2Lightly grease 9 x 5 loaf pan.


3In large bowl, combine flour, soda and salt.


4In separate bowl, cream together butter and brown sugar.


5Stir in eggs and mashed bananas until well blended.


6Stir banana mixture into flour mixture; stir just to moisten.


7Pour batter into prepared loaf pan.


8Bake in preheated oven for 60-65 minutes until a toothpick inserted into center of loaf comes out clean.


9Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
