Use your favorite fish fillets for this recipe. Orange roughy or haddock would both be great choices.
INGREDIENTS:
1/4 cup milk
2 teaspoons salt
2 pounds thawed fresh or frozen fish fillets
1/2 cup fine dry bread crumbs
1/2 teaspoon paprika
1/4 cup grated Parmesan cheese
melted butter
PREPARATION:
Preheat oven to 375°. Grease a 11 1/2 x 7 1/2 x 2-inch baking dish.
Blend together the milk and salt in a shallow bowl. Combine bread crumbs, paprika, and Parmesan cheese in another bowl.
Dip fish fillets into milk mixture then into crumb mixture. Arrange in the prepared baking dish. Drizzle melted butter over fillets. Bake for 25 to 30 minutes, depending on thickness of fillets. Fish should flake easily with a fork when done.

Broiled Tilapia with Horseradish and Herb-Spiked Mayo
Cooking spray
1 lemon
4 (6-ounce) Tilapia fillets
Salt and freshly ground black pepper
1⁄2 teaspoon garlic powder
1⁄3 cup light mayonnaise
2 teaspoons prepared horseradish, or more to taste
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley leaves
Preheat the broiler. Coat a large baking sheet with cooking spray.
Finely grate 1 teaspoon of zest from the lemon and set aside. Squeeze the juice from the lemon over both sides of the fish. Season both sides of the fish with salt and pepper, to taste, and the garlic powder. Place the fish on the prepared baking sheet and broil until fork-tender, about 3 minutes per side.
Meanwhile, in a medium bowl, combine the mayonnaise, lemon zest, horseradish, chives, and parsley. Serve the fish with the mayonnaise mixture spooned over the top.
Crunch Oven Fried Tilapia
INGREDIENTS
1/4 cup all-purpose flour
1/4 teaspoon salt
pepper
2 egg whites
1 pound tilapia fillets
1/4 cup dried bread crumbs
1/4 cup cornmeal
1/2 teaspoon dried basil, crushed
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees Celsius).
Sift or stir flour, salt, and pepper together in a shallow dish, and set aside. In a bowl, beat egg whites until white and frothy. In another bowl, combine bread crumbs with cornmeal and basil.
To bread the fillets, dip first into flour, shaking off any excess, then into egg whites, then into bread crumb mixture.
Spray a shallow baking dish with non-stick cooking spray. Lay fillets flat in the dish, tucking under any thinner ends or edges for more even cooking. Bake in the preheated oven for 10 to 15 minutes, or until fish flakes easily with a fork.
or for a nice change of pace:
preheat oven to 350
spray broiler pan with pam (or some kind of no-stick spray)
lay filets on pan in single layer
spread with ranch dressing (yep, ranch dressing!)
sprinkle diced tomatoes/onions/bell peppers on top if desired
bake approx 20 minutes, or until fish flakes easily with a fork
OVEN-BAKED TILAPIA
1 cup Italian breadcrumbs
3 Tablespoons Ranch dressing mix (powder)
3 Tablespoons grated Parmesan cheese
4 Tilapia fillets
Butter flavor cooking spray
Cover a cookie sheet with aluminum foil. Mix breadcrumbs, dressing mix and cheese and place in a shallow dish. Spray Tilapia fillets with butter flavor spray. Dip fillets in crumb mixture, coat both sides well and place on cookie sheet. Bake at 375 until golden brown.
