Christmas Bread - RECIPES?

Do people still like Fruitcake or is that a thing of the past?





I'm looking for a recipe to make in my Christmas Mini Loaf Pans. Any ideas?Christmas Bread - RECIPES?
CHRISTMAS BREAD





1/2 c. butter


1 c. sugar


2 eggs


1 1/2 c. mashed bananas


2 c. flour


1 tsp. baking soda


1 tsp. salt


1/2 c. chopped maraschino cherries


1/2 c. chocolate chips


1/2 c. chopped nuts





Cream butter and sugar. Blend in eggs and mashed bananas. Combine flour, baking soda and salt. Add to creamed mixture, stirring until blended. Stir in cherries, chocolate chips and nuts. Bake at 350 degrees for 50 minutes. Makes 1 large loaf.





OR





CHRISTMAS CRANBERRY BREAD





2 c. flour


3/4 c. sugar


1 1/2 tsp. baking powder


1 tsp. salt


1/2 tsp. soda


1/2 c. nuts, chopped


1 c. fresh or frozen cranberries, chopped


1 egg, beaten


3/4 c. orange juice


2 tbsp. salad oil





Preheat oven to 350 degrees. Sift dry ingredients together. Stir in nuts and cranberries. Add remaining ingredients and blend until thoroughly moistened. Bake in greased and floured loaf pan 50 minutes or until golden brown.





OR





CREAM CHEESE CHRISTMAS BREAD





1/2 c. finely chopped nuts


1 c. butter, softened


1 1/2 tsp. vanilla


2 1/4 c. flour


1 c. finely chopped candied fruit


1 (8 oz.) pkg. cream cheese, softened


1 1/2 c. sugar


4 eggs


1 1/2 tsp. baking powder


3/4 c. chopped nuts





Grease a 10 inch loaf pan. Sprinkle with the finely chopped nuts, set aside.


Beat together cream cheese and butter until fluffy. Add sugar and vanilla; beat. Add eggs (1 at a time) beating well after each addition.





Combine flour and baking powder to creamed mixture. Stir in candied fruit and chopped nuts. Spoon batter into prepared pan. DO NOT POUR IN THE PREPARED PAN. Bake at 350 degrees for 1 hour 20 minutes, or until done. Cool 5 minutes before removing from the pan. Freezes well.

Pennysav, we have home made Christmas cake with warm custard poured over it on Christmas Eve, and the Grand Kids go crazy unwrapping a minute after midnight.
