Recycled Sourdough bread recipes?

Last night I bought some ';organic'; sourdough bread that costs almost $4. I know, it is going overboard but that was the only kind they had. I also know that's it's going to go bad by this w/end but I have never put organic bread in the freezer. Any suggestions as to how I can make it work w/seafood gumbo I'm making this w/end. You can freeze that bread if you wrap it well.





Or, make up croutons. There's at least a million recipes on the internet. Use them in salad, scrambled eggs, or as a garnish for your gumbo.
