I'm looking for a good banana bread recipe?

I had a really good one, but now I've lost it! I've tried a couple from websites, but didn't like them, any not-so-secret recipes you might share?

I have been making this recipe for years. I've tried others here and there, but I keep coming back to this one. It's a simple and easy recipe; you combine virtually all of the ingredients in a bowl and mix, so you don't have to create a dry mix and a wet mix (and dirty 2 bowls!) as you do in many muffin and quick bread recipes.





The recipe is for Chocolate Chip Banana Bread, but if you don't want the chocolate, just omit them and you will have a great banana bread. I usually do not bother getting the mixer out to blend this batter; it is fine to do it by hand with a spoon. Also, you can use either regular shortening or butter-flavored shortening. The recipe comes from a cookbook called ';Great American Brand Name Recipes Cookbook.';





Chocolate Chip Banana Bread


2 cups unsifted all-purpose flour


1 cup sugar


1 teaspoon baking powder


1 teaspoon salt


1/2 teaspoon baking soda


1 cup mashed ripe bananas (about 3 small)


1/2 cup shortening


2 eggs


1 cup semi-sweet mini chocolate chips


1/2 cup chopped walnuts (optional)





Grease bottom only of a 9x5x3 inch loaf pan; set aside. Combine all ingredients except mini chips and walnuts in a large mixer bowl; blend well on medium speed. Stir in mini chips and walnuts.





Pour into prepared pan. Bake at 350 degrees for 60-80 minutes or until a cake tester inserted in middle comes out clean. Cool 10 minutes; remove from pan. Cool completely on wire rack. Yield: 1 loaf

Ingredients:


2 cups all purpose flour


1 teaspoon salt


2 teaspoons baking soda


1 cup of butter or margarine


2 cups of white sugar


2 cups of mashed overripe bananas


4 eggs beaten


1 cup of chopped walnuts





Preheat oven to 350. Grease and flour two 9X5 inch loaf pans.





Sift the flour, salt and baking soda into a large bowl. In a separate bowl, mix together the butter or margarine and sugar until smooth. Stir in the bananas, eggs and walnuts until well blended. Pour the wet ingredients into the dry mixture, and stir just until blended. Divide the batter evenly between the two loaf pans.





Bake for 60 to 70 minutes in the preheated oven, until a knife inserted into the crown comes out clean. Let the loafs cool in the pans for at least 5 minutes. then turn them out onto a cooling rack.

Banana bread with whipcream in the middle, strawberries with syrup drizzle on top. Any kind of fruit syrup but taste better when you match up with whatever fruit you lay on top.
BANANA BREAD WITH CHOCOLATE CHIPS AND WALNUTS


1 1/2 cups all purpose flour


1 teaspoon baking soda


1 teaspoon baking powder


1/4 teaspoon salt


3/4 cup semisweet chocolate chips


3/4 cup walnuts, toasted, chopped





1/2 cup (1 stick) unsalted butter, room temperature


1 cup sugar


2 large eggs


1 cup mashed ripe bananas


2 tablespoons fresh lemon juice


1 1/2 teaspoons vanilla extract





Preheat oven to 350掳F. Butter and flour 9x5x2 1/2-inch metal loaf pan. Whisk first 4 ingredients in medium bowl to blend. Combine chocolate chips and walnuts in small bowl; add 1 tablespoon flour mixture and toss to coat.





Beat butter in large bowl until fluffy. Gradually add sugar, beating until well blended. Beat in eggs 1 at a time. Beat in mashed bananas, lemon juice and vanilla extract. Beat in flour mixture. Spoon 1/3 of batter into prepared pan. Sprinkle with half of nut mixture. Spoon 1/3 of batter over. Sprinkle with remaining nut mixture. Cover with remaining batter. Run knife through batter in zigzag pattern.





Bake bread until tester inserted into center comes out clean, about 1 hour 5 minutes. Turn out onto rack and cool.





Makes one 9-inch loaf
Candy's Louisiana Banana Bread





INGREDIENTS:


1 cup butter


2 cups sugar


2 tsp.vanilla


2 tsp. lemon juice


4 eggs


2 cups bananas(mashed)


1 tsp. salt


3 1/2 cups flour


2 tsp. baking soda


2 tsp. baking powder


1 cup sour cream


1 cup of chopped nuts


PREPARATION:


Cream the butter with the sugar, add extract and eggs, one at a time, then add bananas. Sift all dry ingredients, add to wet ingredients, alternately with sour cream, fold in nuts. Bake in two greased (or spray with nonstick coating) loaf pans at 350 degrees for 50-55 minutes.

INGREDIENTS


1/2 cup shortening


1 cup white sugar


1 1/2 cups all-purpose flour


1 teaspoon baking soda


1 teaspoon salt


3 ripe bananas





DIRECTIONS





Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan.





In a large bowl, cream the shortening and sugar. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.





Bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.
