Does anyone have a good zucchini bread recipe?

Omg...my mom makes the BEST zucchini bread. I'd go ask her for it right now but she went to bed early since she doesn't feel good. If you want, I'll message you the recipe tomorrow! Lemme no if you still need it!

(This is a recipe that my mom uses. We are vegetarians and therefore, we do not eat eggs...so this is a special recipe just for people who are vegetarians...but I am sure you will love it more than the regular kind or not eve notice the difference! Here I go:)





2 cups sugar


3/4 cup vegetable oil


3 cups flour, sifted


2 cups zucchini (shredded or tossed lightly through blender..chopped VERY small. My first time trying this I accidently messed up!!!!!!!)


2 1/4 teaspoons vanilla


3/4 cup low-fat vanilla yogurt


1 1/2 teaspoons baking powder


1 teaspoon baking soda


1 teaspoon salt


2 1/4 teaspoons cinnamon


3/4 teaspoon nutmeg





Preheat oven to 350 degrees, and grease ONLY the bottoms of two loaf pans.


Measure yogurt into a medium sized mixing bowl.


Add sugar and blend until creamy and slightly thick approx 2-3 minutes


Add oil and blend through.


Add zucchini and vanilla and stir until mixed through.


Sift flour in a medium bowl and add cinnamon, nutmeg, baking powder%26amp; soda, and salt to it.


Add dry ingredients to wet ingredients a little at a time.


I like to slowly mix it in with my whisk.


Fold ingredients into each other just until nicely combined.


Pour'batter' into loaf pans, and put into oven.


Bake for 1 hour (60 minutes) and check to see if it is done (knife poked through center should come clean when done).


If it is not done, continue to bake for additional time.


It could take between an hour and an hour and a half to bake completely.

p.s. if you like thye taste of walnuts...add them in addition to the nutmeg but just make sure the walnuts are in small sizes so you don't choke by surprise when you eat the yummy in your tummy bread =]!Does anyone have a good zucchini bread recipe?

ZUCCHINI BREAD





2 cups sugar


1 cup oil


3 eggs


3 tsp. vanilla





Mix well and add 2 cups shredded zucchini





ADD





2 cups flour


1/4 tsp. baking powder


2 tsp. baking soda


3 tsp. cinnamon


1 tsp salt





Mix well and add 1 cup raisins and or chopped walnuts if desired.





Makes 2 loaves.Bake at 350 for 50-60 min.


Here's a tip. I found by baking mini loaves (you can purchase foiled ones in grocery or dollar stores) this recipe will make 6 and you bake 25-30 min and they are moister and not as browned.


Be sure and spray pans lightly.
Chocolate Zucchini Bread (Pastel de Chocolate Con Calabicita)





4 eggs


3 cups sugar


1 3/4 cups oil


9 tablespoons cocoa


1 1/2 teaspoons vanilla


1/2 teaspoon almond extract


3 cups grated zucchini


1 cup chopped nuts


1/2 cup chopped dates


3 cups flour


1 1/4 teaspoons baking soda


1 1/4 teaspoons baking powder


1 teaspoon salt


1 1/2 teaspoons cinnamon





Sift together flour, baking soda, baking powder, salt and cinnamon. Set aside.


Beat 4 eggs until frothy. Gradually beat in the sugar, then add the oil.


Add cocoa, vanilla and almond extract.


Fold in sifted ingredients.


Add grated zucchini, nuts and dates.


Pour batter into a greased and floured tube pan.


Bake at 350 degrees for 1 hour and 15 minutes. (Though it may take up to 1 hour and 30 minutes. When done, let stand upside down on a rack for at least 20 minutes before removing from pan.

Zucchini Bread





INGREDIENTS:


3 cups all-purpose flour


1 teaspoon salt


1 teaspoon baking soda


1 teaspoon baking powder


3 teaspoons ground cinnamon


3 eggs


1 cup vegetable oil


2 1/4 cups white sugar


3 teaspoons vanilla extract


2 cups grated zucchini


1 cup chopped walnuts








DIRECTIONS:


1. Grease and flour two 8 x 4 inch pans. Preheat oven to


325 degrees F.


2. Sift flour, salt, baking powder, soda, and cinnamon


together in a bowl.


3. Beat eggs, oil, vanilla, and sugar together in a large


bowl. Add sifted ingredients to the creamed mixture, and


beat well. Stir in zucchini and nuts until well combined.


Pour batter into prepared pans.


4. Bake for 40 to 60 minutes, or until tester inserted in


the center comes out clean. Cool in pan on rack for 20


minutes. Remove bread from pan, and completely cool.





Yield: 2 loaves.
