sour milk can be made with either vinegar or lemon juice. My personal favorite is with lemon juice, I think it tastes better and bakes most similar to buttermilk, which is the goal. The way to do it is to take 1 tablespoon of lemon juice (or vinegar) for every 1 cup of sour milk required. Pour the lemon juice into the measuring cup, and then fill the cup with milk (2% is best, but if all you have is skim, it'll still work fine).
Since you need 1/4 of a cup, take 1/4 tbsp of lemon juice, pour it into a 1/4 cup measuring cup, then fill it the rest of the way with whatever milk you have. It'll turn out perfect.I just received my grandmother's old recipes and want to make her banana bread.?
in the years long ago a lot of the reciepes called for sour milk...which was nothing more than buttermilk...i have a lot of my grandmothers reciepes and before she passed i asked what was the sour milk...
The milk needs to be at least 1%. Skim milk is too watery and will make the batter too thin. To make the milk sour, just add 1/2 teaspoon of vinegar and add the milk directly to the recipe. You don't have to wait and the vinegar does not alter the taste. I do this all the time. You can also use buttermilk instead of sour milk, but I'm guessing if you have skim milk, you aren't going to want that much fat.

I think the recipie is calling four soured milk, not like the spoiled kind. It's much like yogurt or a thick buttermilk so you might be just as well off using buttermilk and less water or oil. It can't be made with pasturized milk, so it's hard to create, but it's sold in some grocery stores. It's not very popular in America, so you may have to hunt for it or improvise.

You can make sour milk by using 1 cup of regular milk with 1 tsp of vinegar or lemon juice stirred in. I'd probably use 1 or 2% milk rather than skim. For 1/4 cup sour milk use 1/4 cup milk and 1/4 tsp vinegar or lemon juice. Best of luck to you.
Use closest to whole milk and add 1/2 teaspoon of white vinegar to ';sour'; the milk. Make sure your bananas are black as their sugar content will be higher and flavor stronger.
